Air-Fryer Roasted Potatoes with Parsley, Lemon, and Garlic


1 lb Gold Potato small red or Yukon Gold potatoes, unpeeled, halved

1 tbsp Extra-virgin Olive Oil

1/4 tsp Salt

1/4 tsp Pepper

1 tbsp Parsley Fresh chopped

1 tsp Lemon grated lemon zest

1 Garlic clove, minced
Before you begin
Use small potatoes measuring 1 to 2 inches in diameter.
Step 1
Toss potatoes with oil, salt, and pepper in bowl and arrange in even layer in air-fryer basket. Place basket into air fryer and set temperature to 400 degrees. Cook until potatoes are tender, well browned, and crisp, 25 to 30 minutes, tossing halfway through cooking.
Step 2
Transfer potatoes to now-empty bowl and toss with parsley, lemon zest, and garlic until evenly coated. Season with salt and pepper to taste. Serve.
